Crash Hot Potatoes and my two cents....

So, while looking through The Pioneer Woman's Tasty Kitchen I came across this yummy looking recipe for Potatoes and thought hey, why not make those with some Bratwurst and Sauerkraut, right?!? So I did.


Here are the ingredients for the Crash Hot Potatoes. I used only 7 potatoes because I didn't want many leftovers. Also, I only had fresh Rosemary on hand:

I chopped up the Rosemary:
I bought a 5 pack of Bratwurst and rinsed them:
Poke 'em a few times with a knife or fork and pour over some beer. I know it seems like a waste, but it's worth it:
Let it marinate in the fridge for an hour or so and then you grill them:
For the potatoes, you first need to boil them:
And then you mash them on the oiled baking sheet. Note, that I would never have been able to fit more potatoes on there. I think they were too big:
Brush them with oil and season them and off to the oven they go!
The Sauerkraut is easy because it's pretty much done. All you need are a few slices of thick bacon, cut into cubes; a can of Sauerkraut and some Caraway Seeds and Marjoram (not pictured):
Hmmm...bacon:
Heat the bacon until it's crisp:
Add the Sauerkraut and Spices and let it heat through and that's it:
Take the potatoes out of the oven:
Pretty, huh?
And plate it all up for a delicous and healthy(?) meal:

Oh, the Bratwurst is a little ugly because they "exploded" a little, but they were still very yummy.

The Pioneer Woman - Chicken with Tomatoes and Garlic

It was really easy to make and the end result was just wonderful. For a long time I only cooked/baled/grilled chicken breasts, because I didn't think I could handle anything else, but after attempting this chicken recipe and then this one, I am convinced that chicken isn't scary at all.

So, I recently re-discovered The Pioneer Woman and was overwhelmed by all the yummy recipes, so I tried this one.

So, here are all the ingredients I used:


I know The Pioneer Woman didn't chop the herbs, but I did just a little.
Also, I used chicken drumsticks. I got five and that was just right for my hubby, I and the little Wonderboy.
Heat the butter in the olive oil. I know butter is a no-no with us, but it was so little and Wonderboy never reacted to cooked dairy before we got the diagnosis, so I cheated. Bad mommy!
Add the ckicken and brown:
Flip them over and brown some more:
Deglaze the pan with some wine:
Add the tomatoes. At this point is when I realize that an apron would help tremendously in keeping my new shirt clean.
Stir the ymmy goodness some:
Make sure Wonderboy is occupied running around the kitchen:
Add the herbs. I had basil, parsely, sage and rosemary:
Lay the chicken on top:
Put the lid on and put the pot in the oven:
After an hour or so you get this:
I was so proud of myself:
I served it with some Ziti and a little bit of freshly grated Paremsan:

Without the parmesan this dish is dairy-free.

Hungarian Beef Stew

This is very easy and very good tasting recipe. Cooking with the slowcooker is just so nice because you don't have the stress of making dinner in the evening.

Here are the ingredients:

After browning the meat and mvoing it to the slow cooker, sautee the onions and green peppers:

Add the Paprika:

And the liquid:

Pour it into the slow cooker and add the rest of the ingredients:

I know this picture doesn't look real yummy, but believe me, it's good. It's so good that I forgot to take any more pictures, so I have to update this when I make it again.

Cybele Pascal - Turkey Meatloaf and Sweet Potato Fries

Here is another very delicious and allergy-free receipe I found in The Whole Foods Allergy Cookbook. The meatoaf is super-easy and also easy to eat for my toddler; my top priorities when cooking. Again, no recipe is posted here, but as you can see there are lots of yummy recipes in there so it's worth buying, even if you don't have food allergies.

Louisiana Sloppy Joes

The next recipe I tried out of The Whole Foods Allergy Cookbook is the one for the Louisiana Sloppy Joes.

Here are most of the ingredients, minues the meat and the vegies:


Brown the meat and the vegies:

Add the rest:

Serve it however you like. I used buns, because that's easy:)

Cybele Pascal - Chicken Cacciatore

So, I made my yummy tomato sauce and continued through my new cookbook to make Chicken Cacciatore.

I loved this dish. I loved that my little boy can eat it without having to pick things out. I just love it.
